Winter is the perfect time for steaming mugs of spiced, warm apple cider and marshmallow-laden hot chocolate, but just because it’s cold outside doesn’t mean a chilled, blended drink doesn’t hit the spot too. These vibrantly blue not-so-naughty Jack Frosties are a refreshing departure from the hearty flavors of the holiday season. I went for a non-alcoholic version here for kids, non-drinkers, or people just wanting a break for the night.
I borrowed flavors from our Jack Frost cocktail and focused on making the mocktail bright and lemony. Don’t let the color fool you, it’s sweet and fruity but still a far cry from a movie theater syrupy, blue slushy. The drink is slightly icy but not so thick that you can’t easily sip it from the sugared rim. Frozen lemon sorbet gives the drink body and a hint of bitterness while the fresh lemon juice cuts the sweetness. For best results, look for a lemon sorbet that is as white as possible—I used Wegmans lemon sorbet—as it will help preserve the blue color of the drink. Use any blue sports drink you like, but the darker ones will be brighter after blending. For a fizzier, slightly less thick drink, optionally top off with some seltzer.
