- Step 1Preheat the oven to 350°. Line a baking sheet with parchment paper and set aside.
- Step 2In a food processor, pulse the Blue Diamond Hint of Sea Salt Nut-Thins until you have small crumbs. Transfer to a shallow bowl and set aside.
- Step 3Add the goat cheese, honey, cinnamon, and salt to the bowl of the food processor and pulse until smooth and creamy. Add the walnuts and pulse until the nuts are broken into small bits and evenly incorporated. Transfer the mixture to a piping bag, snip the tip of the bag, and fill each date with the goat-cheese mixture, about ½ to 1 teaspoon each, depending on the size of your date.
- Step 4In a medium bowl, whisk the egg white until stiff peaks begin to form, about 1 minute. Dip each filled date into the egg white, roll it in the Nut-Thins crumbs until fully coated, then transfer to the prepared baking sheet. Bake for 10 minutes, or until lightly golden and the egg white has dried. Allow to cool for 10 minutes before serving.
