Crumbl is known for doing the absolute most with cookies. Thick, oversized, heavily frosted, and borderline overwhelming in the best way. So when I heard they were introducing Thin Thursdays, a weekly drop of thinner, more low-key cookies, I was immediately intrigued.

Every Thursday, Crumbl is now offering Cookie Thins, a slimmer, chewier version of their usual lineup, sold in a small sleeve instead of the standard single giant cookie. It’s positioned as a lighter option, but still very much in the Crumbl universe.

For this test, I tried the oatmeal flavor, and I have to say, this might be one of the most balanced things Crumbl has ever put out.

The first thing you notice is the texture. These are genuinely thin, with a chewy bite and slightly crisp edges that feel closer to a homemade cookie than the usual bakery-style dome. If you’ve ever found a full-size Crumbl cookie a little intimidating, this format makes way more sense.

Flavor-wise, it hits in layers. You get that caramelized sugar note immediately, followed by a warm oat flavor that feels classic and comforting. It finishes with a slight hit of salt, which keeps the whole thing from leaning too sweet.

And that’s the biggest difference here.

Crumbl fans who live for the thick frosting and over-the-top sweetness might miss that signature intensity. There’s no icing, no dramatic topping moment, no need to cut it into quarters just to get through it. But this cookie doesn’t need any of that.

What surprised me most was how easy it was to keep going back for another bite. With a regular Crumbl cookie, you usually tap out after a few bites because it’s so rich. Here, the thinner format makes it feel lighter without sacrificing flavor.

It’s also worth noting that these are priced the same as a regular cookie, but you get a pack of two instead of one large portion.

Overall, this feels like Crumbl recognizing that not everyone wants a dessert that takes commitment. If their classic cookies are a full event, Thin Thursdays are the casual hangout version. And, I might prefer it.
