Simple, fast, and required very few ingredients. The flavor of the peppers is nice with this. It brings life to an otherwise quiet party. This has potential but needs some adjustments to get it where it needs to be. I used Hatch chili peppers and they were already roasted and diced in the jar. I can’t handle green onions, so onion powder is my stand in. I scrambled my egg, of which one was more than enough for me. All of that was fine, but this seriously needs some texture, something savory like sausage, and some meat for body and a toothsome bite. The muffin lost all it’s crisp and steamed beneath that hot egg and melted cheese. This needed some sausage, ham, canadian bacon, etc. to have something to bite into or some crispy bacon to add some crunch on top. The flavor was fine, but this could be so much better with a few modifications. It’s a good starting out point. I like the concept, but perhaps this is better as a egg/cheese/muffin sandwich. I was disappointed that the muffin lost all it’s crisp and everything was soft. I really liked the chili peppers in this. It added a nice flavor. I could see this topped with Hollandaise sauce, bechamel, or sausage gravy.
