The ‘Deliciously Hearty’ Comfort Food I Can’t Stop Making


As a warm-weather enthusiast, I always joke that the only things I like about winter are boots, leggings, and soup. And while that might be a slight exaggeration, I do rely on all three to get me through the colder months. From October to March, I basically live in leggings and my favorite slip-on booties. Two or three times a week, soup is what’s for dinner. Not only are soups the ideal one-pot meal, but they also warm the body and comfort the soul. Plus, you can easily double the recipe for leftovers. 

My favorite soup recipes make use of convenience products and shortcuts to reduce the prep time. That’s why Million Dollar Soup is the newest addition to my dinner repertoire. It uses cans of commercial soup and a rotisserie chicken, and only has four simple steps. Taste-wise, with its creamy and savory broth, it’s the perfect balance of simple ingredients and decadent flavors. How to Make Million Dollar Soup

Just follow these four simple steps to cook up a steaming batch of comfort.

  1. Cook the veggies. Start by cooking the chopped onion and celery in butter in a large pot for 4 to 5 minutes. Season with salt and pepper.
  2. Add additional ingredients and simmer. Stir in diced potatoes, condensed cream of chicken soup, cheddar cheese soup, chicken broth, and seasonings. Simmer for 5 minutes, and add chopped chicken and bacon.
  3. Reduce heat and simmer. Reduce heat to low and simmer, stirring occasionally, for another 15 to 20 minutes. Add in sour cream and creamy mozzarella. Remove from heat.
  4. Serve with toppings. Top with shredded Cheddar cheese, crumbled bacon, scallions, and crushed Ritz crackers.
