Stick some potatoes in a slow cooker and you’re pretty much guaranteed to have a hit. Cheesy potatoes, scalloped potatoes, spicy potatoes, and even baked potatoes are possible in a Crock-Pot—and once you try them that way, you might just stick to the method for good.
Enter Swamp Potatoes, a slow cooker-friendly spin on Southern and Cajun smothered potatoes. When Nicole McLaughlin shared this comfort food recipe last summer, it was an instant hit with our readers. In fact, it was so beloved, it became Nicole’s most popular new recipe of 2025.
Go ahead and memorize this easy formula, because you’ll want these potatoes in your weekly rotation.
Why We Love Them
Smothered potatoes have been around for a long time, most likely because they transform a handful of simple ingredients into a hearty side. What’s more, Swamp Potatoes can easily be adjusted so they’re your meal’s main event. Add a few more servings of protein by doubling your smoked sausage, serve with crusty bread to sop up the spiced butter, and round everything out with a simple salad on the side.

How to Make Swamp Potatoes
Swamp Potatoes require a combination of kitchen staples, fresh vegetables, and sausage. You’ll need gold potatoes, fresh green beans, sliced smoked sausage, a small onion, olive oil, kosher salt, ground black pepper, Cajun seasoning, onion soup mix, garlic powder, and butter. You’ll also need a slow cooker and between 6 and 7 hours of cooking time.
Simply prep the ingredients, add them all to the slow cooker according to the recipe, and cook on Low (stirring a few times throughout the process) until the potatoes are tender and everything is well-flavored. That’s it!
Tips, Tricks, and Tweaks
No slow cooker? No problem. Cook them in a covered dutch oven at 375 degrees F for one hour, or in a skillet over your stove. Simply cook the potatoes to golden brown over medium-high heat, then reduce to low, cover, and simmer for 20 minutes.
Allrecipes community member Redsnapper recommends substituting beef tallow for olive oil to give Swamp Potatoes an even richer flavor.
