This is the first panettone I’ve made. I had leftover candied fruit and mixed peel from my fruitcakes. I used 1 1/2 cups mixed fruit, 3/4 cup mixed peel, but no zest. I had no paper molds, so I used two 8″ cake pans. Covered with foil after 10 minutes, as the egg wash was turning quite dark. Baked a total of 27 minutes. Once removed from oven, I did a butter rub over the top crust and dusted with icing sugar. Very pleased with how this turned out, and will be making again, but without the egg wash.
