During our busiest months, I slice and sauté kielbasa sausage, green cabbage, and white onion in a cast iron skillet at least once a week. Super fast and easy to prepare after a long workday or shuttling our kid to and from evening hockey practice, this dish is a classic go-to dinner.
It’s so simple, requires one pan, and we usually have all three ingredients on hand. The flavorful, filling dinner is done in 10 minutes, and dish clean-up is swift. Leftovers are heat-and-eat delicious the next day.
Why I Love This Easy Dinner
- It’s a great reminder that dinner doesn’t have to be complicated. This meal comes in handy when we’re in a rush, budgeting groceries for the week, or just want to get back to basics. It’s a nod to simpler times and reminds me of my grandparents, who had seven children and needed to feed a lot of mouths with limited resources.
- It’s customizable. While the kielbasa sausage is the mainstay ingredient, there’s always wiggle room for alternate veggies. Sub in red or green bell peppers, add okra, serve it with grits or polenta, or go full-on Cajun and add shrimp and red beans to the skillet. If you favor chicken sausage or turkey sausage, that works, too.
- It requires one dish. I prefer a cast iron skillet on the stovetop, but this three-ingredient meal can be chopped and tossed onto an aluminum-foil-lined sheet pan for ultra ease.
- It’s perfect for next-day leftovers. I’m a big fan of reheating dinner leftovers for lunch the next day, and this dish warms up nicely on the stove or in the microwave. Store in an airtight container in the refrigerator for up to 3 days (the cabbage gets a little too soggy after that).

Ingredients
- 1 (12-ounce) package cooked kielbasa sausage, cut into slices
- ½ head green cabbage, chopped
- 1 white onion, chopped
Directions
- Heat a cast iron skillet over medium heat. Toss ingredients in (a splash of avocado oil or a slab of butter works well here) and saute until veggies are cooked tender but firm, approx. 10 minutes. Serve hot.
- Season, if desired. The kielbasa contains enough flavor without adding additional seasoning, but it’s always nice to customize the flavor to your liking with salt, pepper, garlic salt, or onion powder.
