Cheesecake bars are Delish’s pride and joy, and while some might say we love all of our cheesecake-bar children equally, I’m not afraid to admit that my raspberry cheesecake bars will always hold a special place in my heart. A sweet, creamy lemon cheesecake is layered on top of a Nilla wafer crust before being topped with a tart raspberry jam in this easy dessert, creating the perfect combination of tangy and sweet. Whether you just don’t have the time (or can’t conjure up the effort) to make a full cheesecake or are simply looking for a simple, shareable dessert to win your summer BBQ, these raspberry cheesecake bars are the answer.
These bars are so simple to create, genuinely the most difficult part about this recipe is being patient enough to wait for them to set. This method is much less fussy than making an actual entire cheesecake, but we do still recommend using a water bath when baking to prevent the top from cracking. If it does crack, never fear! The raspberry layer should cover up any imperfections.
