These bars are so simple to create, genuinely the most difficult part about this recipe is being patient enough to wait for them to set. This method is much less fussy than making an actual entire cheesecake, but we do still recommend using a water bath when baking to prevent the top from cracking. If it does crack, never fear! The raspberry layer should cover up any imperfections.
