If Bugs Bunny had a signature cocktail, it would be this carrot margarita. We challenged ourselves to create a spicy margarita that still is slightly sweet and has a rich, sophisticated finish, and this drink checks all the boxes. The sweetness of the carrot juice, the vegetal notes of the tequila, and the rich slightly bitterness of the Amaro all create this beautiful balanced cocktail, while the cayenne adds just the right amount of heat with a spicy kick. It’s the perfect cocktail to spice up your Easter, or to steal the spotlight at any spring dinner party.
Amaro Nonino is a bitter liqueur based on grappa infused with root herbs like thyme and wormwood. These ingredients make it less sweet than other types of amaro, and pair perfectly with the light agave and vegetal sweetness of carrot juice. Nonino isn’t too obscure—you should be able to find it at your local liquor store; however, it’s perfectly fine to substitute Montenegro or Averna in its place. The most important part is to add an amaro so that the cocktail has a little edge of bitterness.
One of our favorite things about this drink? We love the zero-waste aspect of this cocktail, using both the carrot and carrot top greens as garnish. No waste or leftovers here.
