Don’t worry—we didn’t forget a generous spread of cream cheese frosting, which transforms this breakfast-worthy treat into an Easter dessert star.
If you’re looking for a breakfast carrot cake bread, just skip the frosting. Leave it plain or drizzle it with a simple glaze instead (2 tbsp. softened cream cheese + 1/4 c. powdered sugar+ 1 tbsp. whole milk).

- 1 1/4 cups
(150 g.) all-purpose flour

ground cinnamon

- 1 cup
(200 g.) granulated sugar
- 1 cup
vegetable oil

pure vanilla extract

finely grated carrots (from about 4 medium)
- 1/2 cup
golden raisins
- 1/2 cup
toasted chopped pecans
Frosting
- 4 oz.
cream cheese, softened
- 2 Tbsp.
unsalted butter, softened
- 1 cup
(115 g.) confectioners’ sugar, sifted
- 1 tsp.
pure vanilla extract
- 1/4 tsp.
kosher salt
- 1/4 cup
toasted chopped pecans

Bread
- Step 1Arrange a rack in center of oven; preheat to 350°. Grease a 9″ x 5″ loaf pan with cooking spray and line with parchment.
- Step 2In a medium bowl, whisk flour, baking powder, cinnamon, ginger, salt, and nutmeg.
- Step 3In a large bowl, whisk eggs and granulated sugar until light and fluffy. While whisking, slowly pour in oil until well combined, then whisk in vanilla. Stir dry ingredients into egg mixture until just combined. Fold in carrots, raisins, and pecans. Pour batter into prepared pan.
- Step 4Bake bread until a tester inserted into the center comes out clean, about 1 hour 10 minutes. Let cool slightly in pan, then turn out onto a wire rack and let cool completely.

Frosting
- Step 1In a large bowl, using a handheld mixer on medium-high speed, beat cream cheese and butter until smooth. Add confectioners’ sugar, vanilla, and salt and beat until smooth.
- Step 2Spread frosting over loaf. Sprinkle with pecans.
