In fact, it could even be ruining your cakes. Get ready for a quick (but oh-so handy) food science lesson.<\/p>\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cIn order for the toothpick to come out clean,\u201d Bethel continues, \u201cthe temperature of the cake needs to reach 212 degrees F. This is also the point that water evaporates and turns into a gas, meaning that all the moisture is leaving your cake and turning it really, really dry.\u201d<\/p>\n<p id=\"mntl-sc-block_15-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Luckily, the solution to this problem is a simple fix, and it doesn\u2019t even require an extra step. But that&#8217;s where things go wrong. A toothpick inserted into a textbook cooked cake will look slightly greasy with a few moist crumbs sticking to it\u2014not gooey and not bone-dry.\u00a0<\/p>\n<p id=\"mntl-sc-block_24-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Between 200 and 210 degrees, the chemical reactions have finished, the riskier ingredients are safe for consumption, and the cake structure is totally set.
