Thanksgiving is right around the corner, and aside from the turkey and mashed potatoes, there’s another dish you can count on eating: stuffing. Or is it dressing? <\/p>\n

The stuffing vs. dressing debate over which word to use is nothing new. And while I’m sure you have your own preference for which to use on Thanksgiving, many people don’t notice a difference at all. After all, aren’t they pretty much the same thing? <\/p>\n

We chatted with Jason Goldstein of the cooking blog Chop Happy<\/a> to find out the real difference between stuffing and dressing. We also asked a few chefs which they prefer\u2014 and how they serve dressing and\/or stuffing on Thanksgiving. <\/p>\n

Stuffing, according to Merriam-Webster<\/a>, is “a seasoned mixture (as of bread crumbs, vegetables, and butter) that is typically placed inside the cavity of a turkey, pepper, etc., and cooked.” In other words, a mixture that is stuffed<\/em> into your poultry. Makes sense, right? <\/p>\n

Dressing is a little less obvious. Merriam-Webster defines it<\/a> as “<\/strong>a seasoned mixture usually used as a stuffing (as for poultry).” So that makes them the same thing, right? Not exactly. <\/p>\n

So what’s the difference? “Technically, dressing and stuffing can have the same ingredients, but what makes them different is how they are cooked,” Goldstein says. “Stuffing is cooked in the cavity of the turkey, so the juices soak into the ingredients, making it more flavorful. Dressing gets cooked on its own and needs extra liquid to make it flavorful.” <\/p>\n

Stuffing is cooked inside <\/em>the bird. Dressing is cooked outside <\/em>the bird, usually in a casserole dish. Additionally, dressing\u2014especially in the American South\u2014is often made with cornbread instead of baguette pieces or plain white bread. <\/p>\n

In practice, the words dressing<\/em> and stuffing<\/em> are often used interchangeably because they usually include the same core ingredients: vegetables, herbs, some form of starch, and spices. <\/p>\n

Although dressing and stuffing are nearly identical, if you wanted to win the Thanksgiving debate about which is better, you now have some ammo. Goldstein is Team Stuffing. Thomas Davis, executive chef at The Betty<\/a> in Atlanta, however, is Team Dressing. \u201cI have found that it is not possible to perfectly cook your turkey and<\/em> the stuffing, so I have always preferred dressing,” he says. “I like to drizzle the drippings from the cooked turkey over the dressing to enhance the flavor.\u201d <\/p>\n

Michael Scelfo, chef at Boston-based restaurants Alden & Harlow<\/a>, Waypoint<\/a>, and The Longfellow Bar<\/a>, also votes dressing for creativity: \u201cI think that it\u2019s great having a dressing on the side that can be more adventurous than a traditional stuffing flavor. I\u2019ve made lots of dressings using everything from smoked oysters and cornbread to stewed broccoli and aged cheddar.\u201d <\/p>\n

Whether you bake your mixture inside the bird or in a dish on the side, just be sure it\u2019s cooked thoroughly so everyone can actually enjoy the meal.<\/p>\n
