When schools would declare a snow day, I\u2019d make them early in the morning so my kids could grab them after waking up on their bonus day off while I wrote in my office. While our snow day muffins were basic ones that didn\u2019t get very big, sometimes I do like to make fancier, prettier muffins. Big muffins that look like they came from a bakery, my favorite coffee house, or a store like Costco.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> The problem that many of us have with making big muffins isn\u2019t measuring or mixing the ingredients. It\u2019s that as the oh-so-coveted muffin tops take form and begin to expand, the tops usually run into each other and aren\u2019t so pretty. It\u2019s a trick used at some bakeries. If you fill only every other muffin cup and leave the others totally empty, when your muffins rise, they won\u2019t have neighbors for the tops to run into and stick to. Instead, you\u2019ll end up with perfectly round tops on your muffins. (I bet this would work when making big cupcakes, too.)\n<\/p>\n<p id=\"mntl-sc-block_9-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Yes, you\u2019ll get just six muffins instead of 12, but they will be six perfect-looking muffins. If you want 12 muffins, just bake them in two batches.\n<\/p>\n<p id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Notice I said to leave the other muffin cups <em>totally<\/em> empty? If you\u2019ve been told that you should put some water in those empty cups so they don\u2019t burn or warp, <a href=\"https:\/\/www.americastestkitchen.com\/cooksillustrated\/how_tos\/6391-muffin-pan-myth\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"externalLink\" data-ordinal=\"1\" rel=\"nofollow\">Cook&#8217;s Illustrated<\/a> tested it out and debunked that myth a while ago.\u00a0\n<\/p>\n<p><span class=\"heading-toc\" id=\"toc-more-tips-for-the-best-large-muffins\"\/><\/p>\n<h2 id=\"mntl-sc-block_17-0\" class=\"comp mntl-sc-block allrecipes-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text text-title-300\"> More Tips for the Best Large Muffins <\/span> <\/h2>\n<p id=\"mntl-sc-block_18-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Here are a few other tips for making the best muffins:\n<\/p>\n<ul id=\"mntl-sc-block_20-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">\n<li><strong>Don\u2019t overmix:<\/strong> To get tender muffins, mix the flour in until just combined. Overmixing the flour with the wet ingredients activates the gluten, making the muffins tougher and chewier.<\/li>\n<li><strong>Coat add-ins with flour:<\/strong> If you don\u2019t want your fruit, nuts, or chocolate chips to sink to the bottom of the muffins, toss them with flour first.<\/li>\n<li><strong>Spray the top of the pan with nonstick spray too:<\/strong> If you only spray the cups, when the tops rise and spill over onto the top of the pan (as you want them to do), if you don\u2019t have the top of the pan sprayed, too, those beautiful round tops will stick.<\/li>\n<\/ul>\n<p id=\"mntl-sc-block_22-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Armed with all of these muffin tips, I\u2019m in the mood to bake some muffins.
