To keep things balanced on the monument, her children asked Kay how she would like to be remembered. Her answer? Her famous fudge recipe.\n<\/p>\n<p><span class=\"heading-toc\" id=\"toc-how-to-make-kays-fudge-recipe\"\/><\/p>\n<h2 id=\"mntl-sc-block_8-0\" class=\"comp mntl-sc-block allrecipes-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text text-title-300\"> How to Make Kay&#8217;s Fudge Recipe\u00a0 <\/span> <\/h2>\n<p id=\"mntl-sc-block_9-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Of course, we had to try it. We tasked Meg Smith (aka @<a href=\"https:\/\/www.instagram.com\/megsescapades\/\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"externalLink\" data-ordinal=\"1\">megsescapades<\/a>) with testing the iconic recipe\u2014and it\u2019s just as wonderful as you\u2019d expect.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Since the recipe itself doesn\u2019t include a lot of detail, Smith shared some tips and tricks from her experience:\n<\/p>\n<ul id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">\n<li>The recipe calls for &#8220;two squares [of] chocolate,&#8221; which is equal to 2 ounces of unsweetened chocolate (a 100-percent cacao baking bar).<\/li>\n<li>&#8220;Brush down the sides of the pan with a pastry brush and a tiny bit of water after you add the sugar and the mixture begins to lightly bubble,&#8221; Meg recommends. &#8220;This step removes any crystals that may have formed on the sides, preventing them from getting into the fudge mixture and causing it to become grainy.&#8221;<\/li>\n<li>The recipe says to cook the mixture to &#8220;softball stage,&#8221; which is 240 degrees F (115 degrees C). You can also test it by dropping some fudge into cold water\u2014if it forms a pliable ball, you&#8217;re in the right spot.\u00a0<\/li>\n<li>&#8220;I didn\u2018t cool the fudge on a marble slab (since most people don&#8217;t have one), so I tested cooling it in a glass bowl, and it worked well,&#8221; Meg says. &#8220;I found that cooling it to 115 degrees F (46 degrees C) is ideal before beating.
