The mint simple syrup will make more than you need for this drink, so you can refrigerate it and use it in your other favorite non-alcoholic summer drinks, like our nojito and even in homemade lemonade. Not feeling blackberries? Switch it up with your favorite fresh fruit! Strawberries or blueberries would work perfectly here.

Ingredients

Mint Syrup
- Step 1In a small pot, using a wooden spoon, crush mint leaves. Add sugar and water and bring to a boil over medium heat, stirring to dissolve sugar. Continue to boil for 3 minutes. Let cool to room temperature.
- Step 2Strain syrup through a fine-mesh sieve into a small bowl, pressing with spoon to release liquid; discard solids.

Mojitos
- Step 1In a small bowl, combine blackberries and sugar. Using wooden spoon, crush blackberries until broken down.
- Step 2Divide blackberries among 4 glasses. Add 2 Tbsp. mint syrup and 2 Tbsp. lime juice to each glass. Fill glasses with ice. Top off with seltzer, then garnish with mint.
