Chicken Alfredo is one of our go-to weeknight chicken dinners. It’s creamy, cheesy, and perfectly decadent. When we’re craving the same flavors but in a fun, new form, we turn to these chicken Alfredo roll-ups. We use rotisserie chicken, lasagna noodles, and a simple homemade Alfredo sauce to create these shareable roll-ups. Ready in 45 minutes, this is the easy weeknight dinner that kids and adults alike will go crazy for.

The sauce:
Put the jarred stuff away! Making your own Alfredo requires only a few minutes, and you most likely have all the ingredients on hand. Simply melt some butter, cook the garlic, whisk in flour and milk, then the cream cheese and Parmesan. Lemon juice and parsley provide the finishing touches.

The chicken:
The ultimate shortcut here? Using store-bought rotisserie chicken. But if you want to cook your own, you’re more than welcome to if you’ve got some chicken in the fridge you need to use up. Just make sure the internal temp registers 165°.

The noodles:
Long, wide lasagna noodles will hold up the filling and look beautiful when presented. You do have to cook them off first before assembly so they’re pliable enough to roll. Make sure to agitate them as they cook so they don’t stick.

The assembly:
To create this baked pasta dish, the sauce is spooned on the bottom of the pan before layering a lasagna noodle, more sauce, and shredded chicken before rolling up in the dish and spooning with even more sauce. Repeat with your remaining noodles, bake until the chicken is warmed through, and get ready to dig in.
