I only have one issue with the bodega-style bacon, egg, and cheese sandwich, and that’s the fact that potatoes have to come on the side. I’m a potato fanatic, and it’s time they have a starring role in my favorite handheld breakfast. That’s where this crispy potato, bacon, egg, and cheese sandwich comes in.
To achieve this morning meal perfection, smoky bacon, a runny fried egg, juicy tomato, melty American cheese, and spicy mayo are wrapped in a layer of Parmesan-crusted crispy potatoes. The potatoes cook on a sheet tray, allowing you to make up to 4 at once while you fry up the bacon and eggs. A smear of Cajun spiced-mayo is totally optional, but it adds a nice creamy, spicy kick to the party. This is best fresh, but if you’re cooking for just 1 or 2 people, you can make the crispy potato in advance, then reheat in the oven or an air fryer and make the bacon and eggs fresh when you’re ready to eat.
