Picking a favorite breakfast sandwich feels like an unnecessary task. Why would you limit yourself to just one most-favored sandwich when there should always be room in your heart and your stomach for one more? Here at Delish, we’ve happily taken on tons of great breakfast sandwich ideas. So once I heard about the Bee Sting bagel sandwich at New Jersey’s O’Bagel, I had to try it. I mean, it is a breakfast sandwich and a loaded, sweet-spicy masterpiece to boot. Here’s how to make our version.

The bagels:
For this sandwich, we use chewy, toasty sesame bagels. The nutty toasted sesame seeds add warm, savory notes that complement but don’t overpower the rest of the sandwich. Poppyseed, everything bagel, whole wheat, or plain bagels would work here as well. Choose your favorite!

Dressed-up cream cheese:
Sliced scallions and chopped jalapeños add freshness, a little extra crunch, and a kick to the cream cheese. Want a spicier spread? Add an extra tablespoon of chopped jalapeños or a few shakes of your favorite hot sauce. The jalapeño-scallion cream cheese can be made ahead of time and stored in the refrigerator for up to 4 days.

Hot honey bacon:
The only thing better than bacon is spicy-sweet bacon. Here, I use our baked bacon recipe, brushing the bacon generously with hot honey after 15 minutes in the oven. The cooked bacon is crispy, a little sticky, and a little bit spicy too.

Eggs & cheese:
Once the bagels are toasted and the bacon is baked, it’s time to make fluffy, cheesy scrambled eggs. This recipe uses slices of sharp cheddar, but American, pepper Jack, or provolone would all be good too.

Finish your sandwich with more hot honey and a few dashes of your favorite hot sauce and enjoy!
