Winter citrus is celebrated in this beautiful upside down cake that will take you all the way through summer. There’s nothing complicated about this cake, but the little extra effort of slicing the citrus and fanning them out in the bottom of the cake pan results in an incredibly beautiful presentation. The fruit and butter mixture keeps the cake extra moist, while the thyme adds a nice contrast to the sweet-tart fruit. If you need a stunning centerpiece to your weekend brunch or if you simply want to brighten up your day in the dead of winter, this easy cake is the perfect solution.
While the thyme is completely optional, it is so good in the cake. Rosemary could be used as well if you prefer. We used slices from navel, blood orange, Cara Cara oranges, grapefruit, and lemons, but any of your favorite citrus can also be used instead.
Top tip: Do your best to really fill the entire bottom with fruit, trimming slices and overlapping as you need.
