cream cheese, room temperature
- 2 c.
feta cheese, crumbled
- 1 Tbsp.
orange zest
- 1 tsp.
olive oil
- 1/2 tsp.
garlic powder
- 1/4 tsp.
salt
- 1/4 c.
dried cranberries, chopped
- 1/4 c.
shelled roasted pistachios, chopped
- 1/4 c.
crushed Blue Diamond Original Nut-Thins, plus more whole crackers for serving
- 1/4 c.
packed fresh parsley leaves, finely chopped

- Step 1In the bowl of a stand mixer, combine the cream cheese, feta, orange zest, olive oil, garlic powder, and salt. Beat on medium speed until fully incorporated and slightly fluffy, about 3 minutes. Wrap or cover the bowl and transfer to the refrigerator for 1 hour.
- Step 2Combine the cranberries, pistachios, crushed Blue Diamond Original Nut-Thins, and parsley in a shallow bowl and set aside.
- Step 3Remove the chilled cheese mixture from the refrigerator and roll into 20 to 24 bite-size balls, about 1½ tablespoons each. Roll the balls in the cranberry mixture, pressing lightly to coat the cheese all around.
