Fall dessert baking means turning some of our favorite desserts, like the gooey butter cake, into a pumpkin spice version. This cake is meant to be fall-apart gooey, and the moisture in the pumpkin makes this version perfect. The spice cake mix adds even more spice to the cake, but if you’re having a hard time finding it, you can always use a vanilla cake mix.

The cake will come out still looking a little underdone, and that’s ideal. This certainly isn’t a traditional cake. It should still jiggle in the center when it comes out of the oven and will firm up a bit as it cools, not unlike a pumpkin pie. It will be sliceable for easy little bars to serve at your next fall gathering or for Thanksgiving dessert.

These bars can be made a day ahead, just wait to dust with confectioners’ sugar until ready to serve. Leftovers can be stored tightly wrapped at room temperature for up to 3 days.
